My dad brought massive amounts of tomatoes from his farm. Rad. Here is what we did with some of them... Roasted Salsa. So delish. Give it a try.

Put as many tomatoes as ya want, along with a few jalapenos and Pasilla peppers. {I used 2 jalapenos and 1 Pasilla. With approximately 4 large tomatoes.} Broil those babies. On both sides. Till they have lots of black on them.

Grab 2 cloves of garlic, peel em and toss into a blender.

Take your charred peppers and cut off the stem. Cut them in half and rinse out the veins and the seeds. {That's if you want a mild salsa. If you say bring on the spice, then leave those bad boys in.}

Toss your peppers and tomatoes in the blender. Add sea salt and freshly ground pepper to your taste and blend it.

Pour it in a bowl and just try not to eat the entire yummy-ness. It's kinda impossible. Enjoy with your favorite chips. Or top your favorite Mexican food with it. So yummy.

Postscript- I also chopped up some fresh cilantro and white onion and tossed that into the mix as well. It's good either way. Also, if you are not big on garlic... use 1 clove instead of two. Happy eating.
