the delightful smell of cinnamon, nutmeg + pumpkin floated through our home today. so did the heat that came with this hot day accompanied by baking! i am indeed thankful for air conditioning. but regardless of the weather, autumn has arrived, and we must welcome her. we excitedly gathered the ingredients, attempting once again to yield a delicious gluten free pastry. we have not found the baking results we are looking for since this gluten free adventure has begun. but we press on in faith, knowing we shall find just the right mixtures that bring us the tastiest of breads. so we mix and bake and partake. and enjoy DIVINE PUMPKIN MUFFINS! praise indeed. welcome autumn. we are so very glad you are here.

gluten free pumpkin muffins ::

2 C white rice flour
2/3 C potato starch flour
1/3 C tapioca flour
1/2 tsp xanthan gum
3 C sugar
2 tsp cinnamon
2 tsp nutmeg
1 1/2 tsp salt
2 tsp baking soda
1 tsp vanilla
1 C olive oil
2/3 C water
1 small can- 15 oz pumpkin puree
2 eggs

topping ::

almond flour
cinnamon
brown sugar
butter
mix amounts until you reach desired consistency + taste

spray muffin tin with nonstick spray
fill muffin tin with mix
sprinkle topping on
bake @ 350 for 40 minutes

enjoy MOIST, pumpkin muffin goodness. sans gluten. bon appetit.

but--YES--great ideas, jennifer, thank you! actually, i am planning on "expanding" LFF as noah grows and i gain experience with each age group's food needs and recipes. i just wouldn't feel comfortable giving a mom who has a picky 5 year old food suggestions when i have no idea what they are going through. so, as noah grows...so does FLF!

AND i am doing it for the exact reason you state--to wage war against lunchables--ick. ick. ick.
