What do you do with your turkey carcass & leftover meat?
We make this delicious soup.



It's so simple. You may question the ingredients, but give it a try. I think you will enjoy it.

Fill a stock pot with as much water as you want, we usually do around 2-3 quarts. Toss in all the leftover turkey goods- bones, meat, oils, and any vegetables you may have seasoned it with (carrots, celery, onions) boil, covered for 2-3 hours. Meanwhile, make a pot of rice. We usually add around 3-4 cups of cooked rice. Turn soup to a simmer. Take out everything but the broth with a strainer. Be sure to get everything. Skim the oil/fat from the top. Take all the meat off the bones and cut it up finely. Add to soup. Add your cooked rice to the soup. We prefer brown rice, but you can use white rice too. Prepare finely chopped cilantro, finely chopped green onion and soy sauce. I know, it sounds weird. I assure you, the taste is so yummy. Continue to simmer the soup until you are ready to eat. Ladle into a bowl and garnish with soy sauce, green onions & cilantro. Enjoy.

Of course, this soup is delicious at lunch or dinner. But really- it is SO good for breakfast. Again, you may think that is the strangest thing you have ever heard of, to eat soup for breakfast. And I was against it for many years. Until my husband finally won me over. Or perhaps, it was the flavors in the morning that won me over. But, oh soup on a chilly morn is so divine. Give it a try!

(please note, we do NOT add salt to our soup because we add soy sauce upon serving.)

Don't forget the hot chili powder!
